Baked apple cider donuts
Reduce the cider first so the flavor comes through. Baked in a donut pan, then rolled in cinnamon sugar.

Ingredients
- 2 cups apple cider
- 2 cups all-purpose flourPantry item
- 1 tsp baking powderPantry item
- 1/2 tsp baking sodaPantry item
- 1 1/2 tsp cinnamon, dividedPantry item

- 1/2 cup butter, melted (plus 2 Tbsp for brushing)
- 1/2 cup brown sugarPantry item
- 1/2 cup white sugar, plus 1/2 cup for coatingPantry item
- 2 eggs
- 1/4 cup milk

Method
- Simmer the cider in a small pot until it's down to about 2/3 cup, 15–20 minutes. Let it cool.
- Heat the oven to 350°F and grease a donut pan.
- Whisk the flour, baking powder, baking soda, 1/2 tsp cinnamon and salt in a bowl.
- In another bowl, whisk the melted butter, brown sugar, 1/2 cup white sugar, eggs, milk and the reduced cider. Stir in the dry ingredients until just combined.
- Fill the donut cups about 3/4 full. Bake 12–14 minutes, until the tops spring back.
- Mix 1/2 cup sugar with 1 tsp cinnamon. Brush each warm donut with melted butter and roll it in the cinnamon sugar.
